Operemo jih in zagrejemo na toplem olju, da se stebelca zmeh\u010dajo, \u010de bomo v fritajo dodali panceto, jo pope\u010demo, ko se \u0161parglji malenkost pocvrejo. Na ocvrte \u0161parglje in panceto dodamo stepena jajca. Solimo in popramo ter preme\u0161amo in cvremo, da jajca zakrknejo. Jajca pocvremo po \u017eelji, lahko so \u0161e malce teko\u010da ali jih pope\u010dete do trdega.<\/p>\n<p>Razli\u010dici fritaje s \u0161parglji sta \u0161e njeni sorodnici s peski ali blju\u0161\u010dem. S \u010dim? Peski so \u010desnovi poganjki, navadni blju\u0161\u010d pa je zna\u010dilna istrska rastlina, vendar je manj izku\u0161eni raje naj ne i\u0161\u010dejo sami, kajti bojda obstaja tudi strupena verzija, ki je na pogled zelo podobna obi\u010dajni. Za kak\u0161no ta\u0161\u010do ali ostale sovra\u017enike svobodno misle\u010dega liberalca je kljub vsemu lahko zelo primerna, obe fritaji pa se seveda pripravljata na enak na\u010din kot klasi\u010dna s \u0161parglji.
